Soft French Vanilla Chocolate Chip Cookies

These are some delicious cookies I baked this afternoon. The recipe was part of my Christmas baking last year and I like them even more now that I have tried them with whole wheat flour!

I have made a discovery about whole wheat flour.... you get what you pay for! I will only buy King Arthur Whole Wheat flour now! Instead of making things taste just "heavy" it really makes them taste "hearty" instead and really flavorful!!! I also used a different sugar for part of the white sugar portion, but I probably won't do that again because it made these turn out flatter than usual....but they were still tasty! The aroma of the french vanilla pudding makes the kitchen smell like a coffee shop and the flavor is just SO perfect! Give them a try! Oh, I also used regular sized chocolate chips this time, but it didn't turn out as well either...mini is the way to go! (or mini M&Ms like I used at Christmas!)




Recipe:
2 1/4 cups flour
(I use 1 cup King Arthur Whole Wheat and 1 1/4 cups white all purpose)
1 t. baking soda
2 C butter, softened
3/4 C brown sugar
1/4 C white sugar
1 regular size box french vanilla instant pudding mix
2 eggs
1 t. vanilla
1 bag of mini chocolate chips

Preheat oven to 350 degrees. Sift together flours and baking soda. Cream butter and sugars in mixer. Beat in vanilla pudding mix. Stir in eggs and vanilla. Blend in the flour mixture. Fold in chocolate chips.

Drop by a teaspoon onto baking sheet.

Bake 10-12 minutes, cool about 5 minutes on baking sheet. Transfer to rack for remainder of cooling time.

Mmm...those sound so good! I have some whole wheat flour in my pantry at home that I need to use up, so maybe I will start doing some baking with it. I haven't done much lately. I have also read lately that you can add flax seed meal to recipes, but haven't tried it. I have a bag I need to use up. Have you ever tried that? I wonder if Bethany has. I have heard it's really good for you.

I am going to do a blog about whole wheat flour sometime in the next few weeks - remind me if I don't do it.
Pudding always makes cookies, and cakes, so moist. Delicious!
Marcy, Flax seed is really good for you, but I read recently that you need to grind it to get the full benifits... I am doing more research. I may blog about that soon too.
